SUCANAT

  • Sucanat w/molasses is a healthier substitute for brown sugar. It is a product from cane juice.
  • Sucanat w/honey is a healthier substitute for white sugar. It is also a product from cane juice.

I use sucanat in any recipe that calls for sugar. We order our sucanat from www.breadbeckers.com.

BUTTERMILK

  • I use Saco’s Cultured Buttermilk Blend when a recipe calls for buttermilk. It is a dry powder that turns into buttermilk when it is mixed with cold water. It is also not as wasteful as throwing a container of buttermilk away.

EGGS

  • I use free range eggs in my recipes. They can be bought from a local distributor or from a grocery store.

WHEAT

Organic wheat can be bought at a local health store or on line from breadbeckers.com. It is always a good idea to sort the wheat before you mill it, so that stones or other sharp objects do not damage your mill. Every hour flour loses some of its nutrients. That is why we try to mill our wheat daily. We also keep our leftover flour in the freezer to preserve freshness. Flour should be restored to room temperature before using if it is out of the freezer.

  • White wheat is best used with pastries or other fluffy, light colored treats. It can be milled on a fine setting to be used as pasty flour.
  • Red wheat is slightly more nutritious than white wheat. It is more flavorful than white wheat and is related with whole wheat. I use more red wheat in our bread than white wheat.

KITCHEN ACCESSORIES

  • I use the Bosch Universal mixer and blender. I can knead 6 loaves of bread in it.
  • I also own the KitchenAid food processor. It can hold up to 11 cups.
  • We also own the The Kitchen Mill. It is one of the smaller mills, but is a little bit noisier than the bigger mills. It can hold up to 11 cups of flour.
